Tea and Cookies
59Tea time is a revered tradition in many regions of Europe, and though somewhat bastardized by the population of the United States, teatime is just as pleasant wherever you are. Tea time is a time to relax, unwind for a little while, give your brain a break and your taste buds a jump start.
What is a good cup of chai without an almond cookie to go with it? For those of us who are allergic to nuts, how about a heavenly recipe which involves one you may have already seen - Gamergirl's Sexy Fudge Recipe!
Fudge Chip Cookies
For this recipe, you will need to have prepared and on-hand one batch of Gamergirl's Sexy Chocolate Fudge - a recipe you can ONLY find by clicking here.
Ingredients:
- 1 cup softened butter
- 1 cup sugar
- 1 cup brown sugar
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 ½ cup Gamergirl's Sexy Fudge, cubed small
- 2 teaspoons vanilla extract
- 2 eggs
Instructions:
Preheat your oven to 350 degrees.
Beat together the softened butter, white sugar and brown sugar. When this mixture is creamy, add in all the rest of the ingredients and stir it all up nicely.
Use a tablespoon to pull out dough, roll each tablespoon into a ball and put it on a buttered cookie sheet.
Bake for 10 minutes, or until the cookies are nice and golden, then move them to cool. Beware! You *must* allow the cookies to cool fully, otherwise the Sexy Fudge will go everywhere and that gets dangerous.
Almond Cookies
Ingredients:
- 1 cup softened butter
- ¼ teaspoon salt
- ½ teaspoon baking powder
- 2 cups all-purpose flour
- 1 ½ teaspoons almond extract
- About 1/3 cup sugar in a bowl - not mixed in recipe anywhere.
Sugar glaze - optional
- 1 cup confectioners sugar
- 1 ½ teaspoons almond extract
- 3 teaspoons water
- 2 cups toasted almond slices
Combine the softened butter and sugar in a mixing bowl, stir well until the two are well mixed. Then add in the almond extract, stirring to retain the consistency. Finally, add all the dry ingredients together. Now take a teaspoon and start spooning out chunks of dough. Roll these into balls and place on ungreased cookie sheets about 2 inches apart.
Now for the fun part! Take a drinking glass and spray nonstick cooking spray on the bottom of it, you know the part that's usually on the table? Then, press the bottom of the glass into the sugar in that bowl off to the side. Use the bottom of the glass, freshly sugar covered, to flatten the rolls of cookie dough.
For the optional glaze, combine the ingredients together, and stir well. If you want the glaze to be a certain color, use food coloring.
Bake the cookies at 400 degrees for 9 minutes, then let cool for a minute before you handle them. Glaze, sprinkle with almond slices and go!
