Apple-Sauce Banana Popsicles

Well, I have been buying bananas because my daughter loves them and my hubby loves them. Me...well not so much but I will eat them if it comes down to it. The only problem is the bananas kept going bad and I was tired of banana bread after we didn't even finish the last loaf. We ended up giving it away to a friend! So I decided I wanted to make some banana popsicles for my teething toddler. However, the only thing that I could find online about banana popsicles were about the ones you just simply cut them in half par-freeze and then stick a stick in them. Followed by dipping them in chocolate or other toppings. Mind you that sounded great but that wasn't really what I had in mind. I want to use the darn popsicle trays I had bought over a year ago. So I came up with this recipe! My daughter loves them and my hubby even likes them too!

The Ingredients

  • One very very ripe banana (the blacker the better :P)
  • approx 1/2 cup of sugar-free applesauce (I kind of eye ball the applesauce)
  • 1-2 (tablespoons) Tbs. of sugar
  • a sprinkle of cinnamon

This is one of the simplest recipes ever...I promise!

First things first is to mash up the banana till its almost completely mashed up. Then add the apple sauce mix it together well. You don't want one popsicle being super banana or super applesauce even is always the best.

Now here is where you can creative. Mix the cinnamon and sugar first and then slowly add it to your banana and applesauce mixture. Taste and taste until you have enough of the cinnamon and sugar to give the mixture a really nice flavor.

Last but not least...pour or spoon (I prefer to spoon) the mixture into ice cube trays or popsicle trays. Then place popsicle sticks or the sticks that came with the trays into the popsicles and place in freezer to freeze.

I would like to add...that the popsicle trays I bought came with sticks but they didn't work at all. I found that if its plastic make sure there is some kind of ridge or bump so that the popsicle can form around it. That has just been from my experience.

Freezing time is a couple of hours so don't get too antsy this can be a good learning experience for the kids. Patience is a virtue!
