Here's an easy and authentic Thai stir fry recipe – and the great thing about this dish is that all the ingredients needed are easily found at most supermarkets. Also, as with most Thai stir fried dishes, this is quick and easy and perfect as an after work solution.

Although the meal has chili in the name, the longer finger chilies aren’t all that spicy, and people not fond of chili heat can simply eat around the clearly visible peppers. Chili-heads can conversely crunch down on those bites of fire for to get their nightly spice fix!

Thai Style Stir Fried Chicken with Chili

  • ½ lb of chicken breast, sliced crosswise into ½ inch slices
  • 4 -8 green or red finger chilies (Prik Chee Fah, in Thai). These chilies are between 4 and 6 inches long, and about 1 inch thick at their thickest point. They are brightly colored red or green, and moderately spicy. They are commonly seen in grocery stores around the world. If you really don't like spicy food, you can also substitute some or all of the chilies for red or green bell peppers – it will still taste great!
  • 1/2 cup of onion, cut into ½ inch thick slices
  • 2 cloves of smashed garlic (Thai stir fried dishes don't commonly call for chopped garlic. Normally, Thai cooks just smash a clove of garlic flat with the side of a knife and toss it into a hot wok.
  • 1 Tbls of oyster sauce
  • ½ Tbls of soya sauce
  • 1 Tbls of fish sauce
  • 2 tsps of sugar
  • A pinch of MSG (optional)
  1. Heat a small amount of vegetable oil (2 Tbls) in a wok over medium high. When hot, toss in the cloves of garlic and cook for about 30 seconds, or until browning golden, sizzling and fragrant.
  2. Immediately toss in the chicken pieces and stir fry for 1 minute, or until just starting to brown.
  3. After the chicken has started browning slightly, raise the heat to high, add in the chili peppers and onions and stir fry for 2-3 minutes or until slightly softened.
  4. Add in all remaining sauces and seasonings. Fry briefly and taste for seasoning.
  5. Serve with steamed Jasmine rice.

For an interesting variation, serve this stir fry over rice and top each plate with a fried egg. Although this sounds a bit strange, a lot of Thai stir fried dishes are served with a fried egg. It tastes really good!

John, this recipe looks great and similar to how I cook. I love spicy foods and especially Thai. Just give me some Jasmine rice and I;m good to go. I will bookmark this recipe and make it very soon.
