Crispy Catfish And Green Mango Salad Recipe

This dish is served in Thailand as a quick salad appetizer but it can be served as a meal. Along with some jasmine rice it would be a wonderful meal. This dish plays all the flavors of Thai cooking against one another including spicy hot, nutty, sour, sweet, and salty. Almost everyone I have prepared this dish for think its one of the most wonderful things they have ever tasted.

For your recipe you will need.

1. 1/3 Cup of Vegetable Oil.

2. 2-3 Thai Chili Peppers Minced Fine.

3. 1 Teaspoon Sugar

4. 2 Shallots minced fine

5. 1 Lime

6. 1/3 Cup Green Mango

7. 2 Tablespoons Fish Sauce

8. 1 Pound Catfish

9. 1/2 Cup Cashews ( Optional )

Cut your catfish up into very small pieces and bread with flour, salt and pepper. You will want to fry your fish until golden brown. Drain your catfish well on paper towels.

Now mince your chili peppers, and mix together your chili peppers, sugar, fish sauce and the juice of the lime.

Slice and mince your Shallots very fine.

Peel and grate your mango up fine.

If your cashews are uncooked and you are going to use them in the recipe toast them in a pan until golden brown.

Now mix all your ingredients together well and serve. I think you will find that you have just made one of the tastiest Thai dishes you will ever eat. You can cook and serve Jasmine rice with this dish as it goes along with it very well.
