Dutch Oven Cookery
It will take you time and experience to judge the heat of a cooking fire,
You will have to learn when to add more fuel and when to improve the draft,
Where to place the cooking pots on the fire either hanging or to the side.
How to add coals to the top of the Dutch Oven.
Here are some good books to get you started in the right direction.
I own the one Cast Iron cooking for Dummies >>>>>
Don't get me wrong I am not calling anyone a dummy.
I usually place 8 BBQ Chips under the pot and 12 chips on the lid.
I carry a small shovel and a 4 inch paint brush to clean the ashes off the
lid. With a good bed of coals the cooking time is usually not any longer than a
house stove.Your meal should be planned as some items take longer to cook.
And you will have only one pot to work with, plus some on the side.
Actually Dutch Oven cooking is easy and fun.
Here are some basic instructions.
A Dutch Oven is made out of cast iron.It can be used for any baking except
yeast breads.First you will want to place some crushed aluminum foil or a small trivet in the bottom to keep your food from scorching.
Next stand the oven near the fire to warm then put an oven proof dish containing the cake ,pie, bread ,caserole or other type food inside it.
Put the lid on and suspend over the fire,or position it to the side of some coals.Use your shovel to place coals on the lid.
Replace the coals when they burn down and use your paint brush to clear the ashes away.Check your food every 15 minutes,to see if the fire is to hot or to cold.Add or remove coals on the lid accordingly.
You can also cook on the lid by not placing any coals there.
I bake bisquits this way.
