The Best Broccoli Casserole Ever!

Blue Cheese is the Secret Ingredient

 Every Thanksgiving for the past 30 years, my family and all the off-shoots of my family have enjoyed this really delicious casserole. It started when my newly married sister-in-law, when she gave the recipe to my sister. From there it exchanged hands over the years and now, sister, brothers, nieces, nephews, and all kinds of in laws are eating this casserole on Thanksgiving and other times as well.

Join us this Thanksgiving by cooking this yummy casserole!

Here's the recipe:

  • 2 (10 oz. ) packages frozen, chopped broccoli, thawed and drained
  • 1/4 cup crumbled blue cheese
  • 3 oz. cream cheese, softened
  • 2 Tablespoons flour
  • 2 Tablespoons butter
  • 1 cup milk
  • 1 roll Ritz Crackers, crushed

In a saucepan melt the butter. Over medium heat, blend in flour and cheeses, forming a paste. Add milk. Stirring constantly, cook until mixture boils and thickens. Remove from heat and stir in broccoli. Place in a 1 quart casserole dish. Crumble cracker crumbs and put on top of casserole. Bake at 350 degrees for 30 minutes. Serves 6-8.

Tip:  Lay crackers out on a paper towel. Cover with another paper towel. Use a rolling pin or glass and roll across paper towel in different directions to crush crackers. Remove top paper towel. Lift sides of paper towels, forcing cracker crumbs into center of towel. Carefully lift towel and funnel crumbs on top of casserole.

Also, low-fat cream cheese works well, but with all the butter and blue cheese, why worry about the fat content?

This sounds yummy!  My granddaughter likes broccoli, but I don't know that she'll eat it with the additions.  She likes her 'trees' unadorned :)

I have bookmarked this hub as I am definitely going to make it.  It will make a nice addition and change to the same ole aompaniments.
