Chicken Pizza

With the kids out of school for the holidays, what better time to make pizza at home, and save money. This recipe serves six, so make two for the family and you'll be good to go.

Ingredients for Your Pizza

1 package refrigerated pizza dough (10 ounces)

2 boneless and skinless chicken breast halves

6 slices of bacon (chopped)

1 tsp. refrigerated minced garlic (or mince your own)

1/2 tsp.dried oregano

2 cups shredded mozzarella cheese

1/2 cup green onions (chopped)

1/2 red bell pepper ( cut into thin strips)

Begin by preheating your oven to 400 degrees F. Grease a 12-inch pizza pan. After that, press the piza dough into onto the bottom of the pan, making a slight edge around the ouside of the crust. Bake for just 10 minutes.

While the crust is baking, start to saute' the bacon in a large skillet over heat that is medium to high. Stir the bacon continually until is becomes crisp. This step should take only about 2 minutes. Drain the grease off the bacon and set aside for now. In the same skillet, add the chicken and the garlic.

Saute' the chicken and galic until the chicken is cooked through; about 3 minutes total. Add the oregano.

The pizza dough should be done. Remove from the oven to add toppings. First, sprinkle 1 cup of mozzarella cheese on top of the baked crust. Next arrange the chicken, bacon, green onions, and bell pepper on top the the cheese. Use the remaining mozzarella cheese, ( 1 cup) and add to top of pizza.

Bake this pizza until the cheese is melted and the crust is a golden brown. About 8 to 10 minutes. Watch for the last 3 minutes so not to let the cheese start to burn. Serve this wonderful pizza immediately.
