I enjoy potatoes, baked, home fried, French fried, mashed, boiled and of course in a potato salad.

 

There are many different ways to make a potato salad, hot, cold and using baked potatoes, for example.

 

There is often discussion on which potato makes the best salad. I generally use red potatoes, preferring small ones to the larger later season one. On occasion when I cannot find small red potatoes and just have to have potato salad I will work with Yukon Golds.

 

 I am very fond of my red potato salad but there is one other that is just as tasty and perhaps maybe just maybe, even better.

 

That salad is the Yukon gold potato salad. If you insist on mayonnaise on your potato salad is not for you but if you are looking for good flavour, good nutrition and I ever so modestly say a great potato salad this is it.

 

Now you may be wondering okay which salad does he like the best well, I do like them both, they are just different but for overall taste the Yukon Gold may be a tiny bit tastier.

 

YG Potato Salad

 

 

Ingredients;

 

8 medium sized Yukon gold potatoes, diced

1 cup chives diced

6 radishes finely sliced

1 small red pepper diced

2 stalks celery finely sliced

Sea salt and black pepper to taste

1/ cup balsamic vinagrete.

 

Preparation:

 

1-      Boil or steam  potatoes DO NOT peel them

2-      Prepare other ingredients

3-      After potatoes are cooked allow them to cool and then dice

4-      Add potatoes to resealble container

5-      Add other ingredients except vinagrete

6-      Stir

7-      Add vinaigrette

8-      Stir

9-      Seal container shake to mix

10-  Place in refrigerator for minimum 90 minutes, can sit overnight

11-  Remove and serve.

 

This is an easy dish to prepare and can be made the day before you serve it makes a great side dish with cold chicken or ham.

Like you, I just prefer vinaigrette, or just olive oil and balsamic vinegar. Much better than that mayo mix!
