Summertime Appetizer



An Appetizer to Impress With

I first came across this little recipe about a year ago. It has been an incredible hit everytime.

It is really a winner for any occasion or season but as a summertime appetizer it can't be beat. There are a couple of things I have figured out to make it easier to make and even better than the original recipe I found.

The name of the recipe/appetizer is - Prosciutto Rolls with Arugula and Figs.

The ingredients are as follows - I will list the original and then comment about any variations I have discovered.

Ingredients:

1/4 cup extra-virgin olive oil

2 tablespoons grated lemon peel

12 then slices prosciutto (not paper thin)

6 ounces soft fresh goat cheese

16 dried black Mission figs, quartered

4 large bunches arugula, stems trimmed.

Preparation:

Whisk oil, lemon juice and peel in medium bowl to blend. Lay prosciutto on work surface, spacing slices 2 inches apart. Spread cheese evenly over prosciutto. Arrange figs over cheese, dividing and spacing evenly. Drizzle lemon mixture over. Sprinkle with pepper. Arrange 6 arugula leaves atop each prosciutto slice, alternating stems and tops and allowing tops to extend 1 inch over long sides of prosciutto.

Starting at 1 short end of each prosciutto slice, tightly roll up as for a jelly roll. cut rolls crosswise in half. Transfer to platter. ( Can be made 2 hours ahead. Cover with damp paper towels, then plastic; chill.)

Here are the tricks I have learned.

#1 Its near impossible to spread the cheese evenly. As long as you have it dispersed over the prosciutto with some even distribution it is fine. It kind of clumps up so just spread it as much as possible without tearing the prosciutto too much.

#2 Using fresh figs is better. Its a little messy but it adds a lot to the flavor.

#3 Make sure you cut the rolls in half with a sharp knife. Otherwise it tears the roll.

#4 Make more than 12 because they go fast.

#5 Make sure you have enough arugula because it is hard to find really good pieces to use as the bunch gets smaller. The arugula really adds to the presentation.

#6 Have fun with this recipe and enjoy the end result. They are refreshing and healthy.
