Leftover Lunch
One of the easiest and healthiest lunches is to use up your leftovers and enjoy them for lunch. Keep several inexpensive containers on hand so at the end of your meal you can create lunch size portions, then place in a lunch sack and refrigerate overnight. In the morning on your way out to work, grab one and enjoy it for lunch later in your workday.
It’s an easy habit to get into and it’s a tasty budget conscious alternative to eating out everyday. Besides, it’s always fun when your co-workers ask you what you are having and you can tell them it’s your “mystery” lunch because you never know how its going to turn out the next day (usually delicious).
It’s a Wrap
When you do your normal weekly grocery shopping, pick up some whole wheat or other flavor low-fat wraps in the bread isle. Wraps are a healthy alternative to eating the same dull sandwiches for lunch everyday. And you can fill a wrap up with delicious ingredients like cold cuts, cheese, fresh veggies or egg or tuna salads. Any wrap can be made up ahead of time and kept in the refrigerator for a week so you can grab one everyday on your way out and enjoy a tasty nutritious lunch on the run.

Eggs are nature’s miracle food. Not only do they contain high amounts of energy enhancing protein, but they also carry lots of Vitamins E & D. Hard-boiled eggs are a convenient quick lunch idea. Make them ahead of time, refrigerate and whenever you need a quick lunch you can take one and enjoy it anytime anywhere. You can also make a delicious egg salad out of them with a little mayo and seasoning to enjoy on a sandwich or wrap or over some green leafy lettuce.
Soup Simplicity
Talk about a wholesome lunch! Soup is a convenient and very portable lunch idea, especially for a busy woman who doesn’t have time to prepare meals. You can either buy them in convenient heat up cans in the supermarket or you can make you own home-made soups at home, cool and place in air tight containers to be toted to work and warmed up in the company microwave. There are hundreds of varieties of soups and they come in low fat, low salt varieties.
