The Salad Eating Fool Strikes Again!

Here is another salad from the “Salad Eating Fool” so lovingly dubbed by my husband.  This awesome, flavorful, favorite salad of mine is Fettuccine with Pesto, Sundried Tomatoes and Spinach and it is so easy to make.

First, cook up a pound of fettuccine; use a whole wheat version like Bionaturae.  I love the flavor and texture of whole wheat pasta…I didn’t at first, but now the white wheat just doesn’t do anything for me anymore.  It’s blah!

When the noodles are al dente or however you prefer to eat your pasta, drain and rinse them under cool water to stop the cooking.  Put the noodles in a big bowl.

Next add as much as you like of basil pesto…this could be your own homemade version or store bought from the refrigerated section of your local market.  Make sure you add enough to coat the pasta.  You don't want it dry.

Now, add your sundried tomatoes, again these can be your own dehydrated tomatoes from last summer or use store bought.  If you don’t mind the oil, use the oil packed kind.

Finally, add fresh spinach that you have roughly chopped into bite size or slightly larger pieces.  Serve at slightly warm or room temperature - if you haven’t eaten it all up yourself already.

Simple variations can be made by adding crumbled feta cheese and/or thinly sliced red onion.  Enjoy with your favorite glass of wine.

The Salad Eating Fool did good! My kind of recipe--fast, easy and very delicious!!! Grilled Chicken would be my addition.

Proud Mom, thanks for your comment. Grilled chicken would be a great addition if you wanted to add a meat protein, as would shrimp.
