Eh? What's wrong with carrots?

Absolutely nothing. Superb food, full of vitamins and goodness. Dull as dishwater.

If you're used to having your carrots boiled to the point of sogginess with no taste left to speak of, then this recipe might just be for you. It's as effective as it is simple and it will give the humble carrot the jolt it deserves.

Ingredients

  • Carrots (as many as you want)
  • Sugar (about 1tbs per 8 carrots)
  • Large knob of butter
  • 1 tsp ground cumin (optional)

So far, so easy huh? No need to measure the ingredients too accurately, you can adjust to taste yourself.

Method

Cut the carrots lengthwise into thin 1/2 cm strips and pop into a large frying pan. Pour over cold water until the carrots are just covered.

Add the butter and sprinkle the sugar evenly all over. Turn on the heat to medium and cook until the water has all evaporated.

When the water has gone, quickly turn the carrots and fry them off in the butter. If required, spring over the cumin and serve.

Nice, other tip: Carrots taste also very yummy just cooked al dente in ---- orange juice. SY
