My potatoe ball recipe
I am going to introduce you to a great potato based recipe. In Spanish it's called " Rellenos de papas " but we'll refer to them as potato balls since I added my own twist. We are going to make balls of potatoes and what you want inside of them is up to you.
It's a real simple recipe, here's what you'll need.
1 box of mashed potatoes (hungry jack works best)
1 LB of meat (any kind)
1 green pepper
1/4 bush of cilantro
1 onion
Salt
Pepper
1/4 clove of garlic
1 medium sauce pan
1 deep frying pan
Flour
4 eggs
So after you choose your meat we can get started. If your using chicken then shred or cut into small pieces. Ground beef is perfect for the job and ground turkey is superb tasting and healthy.
1st step
Make mash potatoes first and follow directions on box for 4 servings but add 1 more 1/2 cup of mash potatoes to make them thick. Once the mashed potatoes are done then sit in the freezer in a bowl until they cool off. (about 5 minutes)
2nd step
In a medium saucepan combine all your vegetables, seasonings, and meat and cook until done.
3rd step
Remove the potatoes from the freezer. Find a dry counter top and apply some flower so that the potatoes won't stick to the surface. Your mashed potatoes should be like Play-Doh. Make a hand full ball and flatten it until it's about the size of a small coffee plate (or a circle the size of your hand) Pre make about 10 the size of a small plate and they should have a circle figure.
4th step
Add 2 tablespoons of meat mixture onto the potatoes and then like Play-Doh just ball it up until the meat is covered. So your covering the meat with mashed potatoes but in the form of a ball.
5th step
beat 4 eggs in a small bowl and add salt and pepper
6th step
Pour some oil in a frying pan. The level should be at least 5 inches or 1/2 quart of oil. (enough to cover the ball) Pre heat the oil, bring to a medium level. Dip the balls into the eggs and then add them to the oil. Fry for about 2 minutes or until golden colored.
If frying is not in your best interest (health wise) then skip adding the eggs and bake the balls for about 15 minutes.
Making potatoes balls is one of my favorite recipes. They are originally made with real potatoes mashed but the instant kind is more convenient and taste way better. Once you get use to making them you'll learn that you can make many other types of potato balls. My favorite is broccoli and cheese.
