Make The Perfect Meatloaf

What do you think of when you are in the mood for "comfort food"? For a lot of people, the first thing that comes to mind is meatloaf. Meatloaf is really a very simple dish to prepare if you know how to prepare it.

The following recipe is for a meatloaf stuffed with cheddar cheese. Play around with it, if you wish. You may use a different type of cheese. I often will use Mozzarella instead of cheddar. You can make a beef gravy for the cheddar cheese version or use a spicy tomato sauce for the mozzarella one, or just serve it just like it is as it comes out of the oven.

MEATLOAF

INGREDIENTS:

3 Lbs. Ground Chuck

2 Slices Bread, toasted and pulled apart

1/2 Cup Green Bell Pepper, Diced

1/2 Cup Celery, Chopped

1 Onion, Diced

8 oz. Tomato Sauce

2 Eggs, beaten

6 oz. Cheddar Cheese, Shredded

Preheat oven to 325 degrees.

Combine all ingredients except the Cheddar Cheese in a bowl large enough to mix the ingredients together, approximately a 4 quart size. Use a spoon to mix so the heat from your hands will not warm the mixture. It is easier to work with it if it is as cool as possible. Use a drip pan that has the rack over a base so the fat can drip away.

Place half of the mixture on the rack and shape into a rectangle. Press on the edges to form a ridge all the way around, similar to making a pie crust. When the base is formed, put the cheese in the center and spread to cover the flat part of the base.

Place the remaining mixture in sections over the cheese. Use your hands to spread the mixture to a thin layer, covering the whole base. Press to seal all of the edges so the cheese stays inside the meatloaf.

Bake in the preheated oven for one and a half hour. Remove from oven and let stand for at least 5 minutes before slicing. Enjoy!

My mother used to cook her meatloaf in a loaf pan, and it was drowning in grease! I haven't made meatloaf in years, but I do have a "meatloaf" pan, that is shaped like a deep loaf pan with a rack in it so the meat doesn't sit in grease. I forget where I got it, but it's pretty old.

Hi dafla, if you can't locate your "meatloaf" pan, you can find the one in the video at your local Target store. I have a countertop convection oven that I use rather than using my gas oven, which really heats up the kitchen for most things, and this is a smaller pan that fits nicely into the convection oven and is the ideal size for many dishes. I hope you give meatloaf another try. Let me know how it turns out.

Thanks! I use my toaster/broiler/rotisserie oven for everything but cookies and cakes. I love it! I got one at Big Lots that even has a place on top to grill things, and keep things warm. Being the frugal freak that I am, I need something that does everything and uses less electricity.

BTW, I found this meatloaf pan at Target online. It looks exactly like the one I have...somewhere! LOL
