It's Gotta Be Quick

In am always looking for recipes that are quick and easy. I make my own most of the time more from need then anything else.

I love to cook but I also have a lot of demands from my friends, family as well as my endless endeavors, to say the least my life is very busy. I thought there may be some other impatient cooks out there. People who just want to cut to the chase so to speak and get dinner on the table for that hungry family. One thing I pride myself on is that we sit down every night as a family to eat, this is one of my favorite times of my day. We can all talk about and share our daily experiences. I love to get together with my family.

Food is a great way to bring them all together in one spot if even only for a few moments. My grown children have often commented on the fact that their favorite memories are of us all eating together every night. I appreciate the fact that my hard work to keep the family together over the years has paid off. Family is one of the most important things in my life so meal time is very important. Some times when I am running late I have to pull from my quick recipe guide in my jumbled up brain lol. One of my favorite recipes is quick chicken strips. The recipe is below.


4-Chicken Breast

2 1/2-TBSP Dry Chicken Bullion Seasoning

( or any seasoning you like)

3-4 cups self rise flour

2-eggs

2 TBSP Milk

Pan for frying

Oil for frying

I am using 4 good sized chicken breast.

I like to cut them into 1/2 inch strips.

When the chicken breast is half frozen

it is easier to work with and cuts well.

Once I have my strips cut up

I add my flour and seasonings to a bowel,

beat my eggs and milk together in another bowel.

I use tongs to dip my chicken strips

first in the egg then dip in the flour.

I dip mine twice you may want more

breading if so double your ingredients.

Dip them in egg and flour until you

get the breading thickness you desire.

The strips cook quickly enough however

I like to brown mine and stick them in the

oven to finish cooking them.

Then I make my white gravy. I love white gravy!


I love the instant white peppered gravy from my days as a business owner. I had my own lunch time grill, motel as well as convenience store.Quick delicious gravy is a must in my house. Although if I have time I make my own. There are different ways to make gravy. I will name two ways here.

One way is the flour and milk way. Another way is using corn starch.

White Peppered Gravy

1-2 cups of self rise flour

4-cups Milk

Salt Pepper to taste

Oil

Pan for frying

Whisk

First I like to use my cook oil from cooking my chicken strips for flour gravy. I remove some of my oil if I need to as it tends to be a bit to salty for me. I add some new to the oil I used for my chicken strips if needed.

Take about a cup or so of flour add your flour to your pan of oil. You should add enough oil that the flour looks like a dry paste.

You are going to cook the oil and flour long enough to brown the flour slightly. The reason you want to brown the flour is so it does not taste like raw flour.

Once the flour looks slightly brown go ahead and add your milk to the flour but make sure you have your whisk handy.

Go ahead and whisk away until all the flour has dissolved into the milk. You may want to turn your heat to medium high at this point because it will take a while to warm the milk and thicken your gravy.

Once your gravy is as thick as you desire then add your salt and pepper to taste. I am really bad at writing down this a I go these measurements are approximate and feel free to adjust the recipe to fit your life and your needs. Enjoy.

A college students budget lol

When my oldest daugther was in college she loved this.

3 cheese slices any kind

2-4 Tbsp Milk -less if you like thicker cheese sauce

Corn Chips

Using a glass or heavy plastic bowel

Place cheese slices in the bottom

Add milk

Microwave on high for 15-20 sec intervals until melted

stirring constantly. Add JalapeƱos optional & dip corn chips in cheese sauce enjoy

  • Pepper Jack cheese or American cheese
  • Jalapenos
  • Taco meat
  • Salsa
  • Add anything else you like

I make these for a quick snack for the kids

they are quick, easy to make & delicious
