Tomato and Roasted Red Pepper Soup Recipe
Here's a delightfully delicious cold summer soup that everyone is sure to enjoy. I know everyone that I have ever made this soup for have loved it. A few were really surprised at how great this soup does taste.
To Make Your Tomato And Roasted Red Pepper Soup You Will Need.
1. 3 Cups Tomato Juice.
2. 3 Cups Finely Diced Tomatoes.
3. 1 Cup Finely Chopped Roasted Red Bell Peppers.
4. 4 Tablespoons Olive Oil.
5. 2 Tablespoons Of Red Wine Vinegar.
6. 2 Tablespoons White Horseradish.
7. 2 Tablespoons Minced Fresh Garlic.
8. 1 Tablespoon Ground Cayenne Pepper.
9. 1 Tablespoon Sea Salt.
Mix all of the above together and mix very well in your food processor until you have it all well blended and smooth.Chill over night before you serve.
Now at the same time your going to want to chill soup bowls, saucers and soup spoons in the refrigerator for at least six hours.
Ladle the chilled soup into the chilled bowls and garnish the top of each bowl with a teaspoon of sour cream and a little finely chopped fresh basil. Serve with Captain Wafers for a extra tasty treat.
