The following is a list of console RPGs I've enjoyed playing. They are not ordered by sales numbers or any other statistics. They are simply ordered by how much I enjoyed playing them. Also, I have not played every console game in existence, so there is a good possibility I left out a game that should otherwise be listed. Feel free to leave any comments, who knows, maybe you can sway me to reorder the list or even add a game.
#1 Chrono Trigger (SNES, PSX, DS)
Hands down the best RPG I have ever played. I still own an original copy of this game and play it regularly. Chrono Triggers unique battle system, vivid characters, and multiple endings make this game one of the best RPGs of all time. I would dare say you're not a true RPG fan unless you've played this game.

#2 Final Fantasy VII (PSX)
Final Fantasy VII is considered by many to be the best title in the series, and I'm inclined to agree with them. It's really not all that different from your standard Final Fantasy game in terms of gameplay. I think what really sets it apart from the rest is the storyline and its unforgettable characters.

#3 Dragon Quest VIII: Journey of the Cursed King (PS2)
I've always been a huge fan of the Dragon Quest/Warrior series and this is by far the best the series has to offer. Dragon Quest VIII has excellent graphics, an engaging story, and over 100 hours of gameplay. It's also harder than most recent RPGs, which is refreshing as most RPGs today are severely lacking in difficulty.

#4 The Legend of Zelda: Ocarina of Time (N64, GCN, VC)
This is my favorite game from the The Legend of Zelda series. I've always been a fan of the puzzles these games contain and Ocarina of Time features some of the hardest puzzles in the series. Aside from that, the game looks beautiful, the story is great, the gameplay is fantastic, and the controls are flawless.

#5 Super Mario RPG: Legend of the Seven Stars (SNES)
Ths is the first game I played when I bought my SNES and I still play it from time to time. Super Mario RPG contains several adventure elements and is the first game in which Mario and Bowser are allies. My favorite feature of the game is the timed attacks system, in which timed button presses determine the power of your character's attack.

Disgaea is a tactical role-playing game with almost limitless replay value. Its quirky characters, expansive customization, and humorous storyline make this title a must for any Tactical RPG fan.

Final Fantasy Tactics is a favorite among Tactical RPG fans. The game features customizable characters, an intricate Job system, and challenging gameplay.

#8 The Elder Scrolls IV: Oblivion (PS3, Xbox 360)
Oblivion offers an incredibly large and detailed world to explore. There are hundreds of side quests and completing everything the game has to offer can take well over 200 hours. You really feel like part of a living, breathing world while you play this game.

#9 Tales of Symphonia (GCN)
Tales of Symphonia has a great storyline, vast world, and an engaging real-time combat system. The main reason I enjoyed this game was that the combat sequences could be played by up to 4 players simultaneously.

#10 Kingdom Hearts (PS2)
I honestly had very low expectations for this game, and only gave it a chance because of Squaresoft. It ended up being one of the most enjoyable RPG experiences I've had. The game is relatively easy, but fun, with an entertaining storyline and engaging combat system.

I take it you have never played Earthbound. I am obsessed with Chrono Trigger, Dragon Quest VIII, and Zelda as well. But I think that Earthbound should have taken Final Fantasy VII's place. Though I regard FFVII as the the best in the series- the games don't have a good story. Sure, you can say that they are complex, but that really doesn't cut it. This is a surprisingly good list, though.
You also never mentioned Suikoden 1 and 2 (which are my two favorite rpgs of all time), each of which are interconnected and possess some of the best and moving RPG content ever I think.
