Ingredients:

6 Chicken breast halves,
-boned and skinned
2 tb Ground cumin
1 tb Garlic salt
1 tb Vegetable oil
1 c Black beans, canned, rinsed
-and drained
1 c Whole kernel corn, drained
1/3 c Pace Picante Sauce
1/3 c Diced red bell pepper
2 ts Chopped cilantro

SPICY-SWEET CHICKEN

Servings: 1
Ingredients:

7 oz Pace Picante Sauce
6 oz Honey
1 lb Cubed chicken breast
1 lb Cubed turkey breast
1 lb Cooked shrimp
1 lb Smoked sausage slices (1/4′)

Simmer Pace and honey in a saucepan until thickened.Pour over cooked meats.

AMARILLO CHICKEN SALAD

Servings: 4
Ingredients:

2 lg Whole chicken breasts,
-split, boned and skinned- 1/2" cubes
1/3 c Pace Picante Sauce
1/3 ts Ground cumin
1/2 ts Salt
1/3 c Dairy sour cream
2 ts Mayonnaise
1 Ripe avacado-diced 1/2"
1.5 c Sliced celery
Bibb or leaf lettuce leaves
5 Crisply cooked bacon slices,
-crumbled

cook chicken, slice in thin strips, arrange the lettuce on plates add all other ingredients. Place sliced chicken on top, fanned out.

ORIENTAL CASHEW CHICKEN RECIPE

Servings: 4
Ingredients:

2 Whole chicken breasts
(about 2 lbs), boned and
Skinned-cubed 1/2"
2 Egg white
1 tb Cornstarch
1 tb Thin soy sauce
1/3 ts White pepper
1 Green bell pepper- strips
8 oz sliced bamboo
Shoots, drained
2 tb Cornstarch
2 tb Cold water
2 tb Thin soy sauce
3 tb Peanut oil
1 c Raw cashews
1/3 ts Salt
1 tb Ginger root chopped fine
1 ts Hoisin sauce
1 ts Chili paste
1/3 c Chicken broth
3 tb Green onion tops, chopped
2 Egg

Saute all vegetables, cornstarch, soy and white pepper in bowl and stir in cooked chicken.

Ingredients:

2 Boned Chicken Breasts,
Cut into thin strips
1 tb Oil
2 Green peppers,julianne'
1 Onion, julianne'
1 Fresh mushrooms 1/4rd
1 lb Italian Sausages. Sliced
Into rounds about 1/2′
Thick.

Saute Chicken, add all vegetables, stir until done.

Servings: 7
Ingredients:

7 -1 oz. slices French bread
1 oz oil
1/3 ts Garlic powder
2 lb Boneless chicken breasts- cooked and sliced thin.
1/4 c Fresh lemon juice
1/3 c Red wine vinegar
2 tb Olive oil
1 tb Anchovy paste
1/3 ts Fresh ground pepper
5 cl Garlic- minced fine
9 c Romaine lettuce- hand torn into 2" pieces
1/2 c Grated parmesan cheese

saute chicken. add all ingredients in bowl. add chicken in slices. toss until the romaine is lightly coated.

Ingredients:

1/3 c Olive Oil
1/3 ts Crushed Red Pepper
2 lb Boneless Chicken Breasts -cut into thin strips
1/2 lb Thickly Sliced Mushrooms
2 c marinara sauce
2 lg Sweet Peppers julianne'
1 lg Green Pepper julianne'
3/4 tb Dried Thyme; crushed
3 tb Red Wine Vinegar
Hot cooked spaghetti

Assemble all ingredients into baking dish. bake at 350* F for 1 hour and 10 minutes.

1/3 c Soy Sauce
1 c Orange Juice
2 tb Lemon Juice
1 tb Sugar
1 Clove Garlic; crushed
1/3 ts Ginger
********************
2 tb Oil
1 md Onion; julianne
1 Green pepper; julianne
1 Red Pepper; julianne
12 Flour Tortillas (6-inch)

1 tb Garlic salt
1 ts Vegetable oil

Dredge chicken in cumin, garlic salt, saute. Mix all remaining ingredients for the salsa.
