Delicious tortellini soup with basil

I don't know about you, but I can eat soup any time doing the year. Even in the eat of summer, soup is for me because you can enjoy it in a cooled off home. The following recipe is very good for all and can be considered a perfect dish for vegetarians as well. For meat eaters, baked chicken on the side is a nice compliment.

Ingredients

5 cups of chicken broth (homemade or from can)

1 pack (9 ounces of refrigerated cheese tortelinni

1 can (15 ounces) white kidney beans

2 medium chopped tomatoes

1/2 cups  chopped fresh basil

2 1/2 tablespoons of balsamic vinegar

1/2 cup shredded Parmesan cheese

salt and pepper to taste

 

Simple and quick recipe

Take a large pot and bring broth to a boil. Next add the tortellini and cook for about 8 minutes or until tender. Stir in the beans, basil, and tomatoes and reduce heat. Let soup simmer for about 10 minutes. Add the balsamic vinegar, salt and pepper. Serve withthe parmesan cheese.

Serves 6

Basil is one of my favorite food herbs so this soup should go great with a sandwich.
