Traditional Oat Cookies
I have made these cookies a few times and everyone who has tried them has gone mad for them! I have to make them about twice a week! So whether its having friends round for a cuppa or something for the kids to munch on, these cookies are so quick and easy to make for all occasions.
You will need:
- 100g self raising flour
- 100g porridge oats (any brand, I've been using some I brought at my local market)
- Half teaspoon bicarbonate of soda.
- 100g butter or margarine.
- 100g granulated sugar
- 1 table spoon of golden syrup.
How to make:
- Heat the oven to gas mark 4 or 180 degrees.
- Grease a baking tray with some butter or margarine.
- In a bowl put the flour, oats and bicarbonate of soda, give a quick stir to mix it up and set to one side.
- In a saucepan, put the butter/margarine, sugar and golden syrup, stir on a low heat until the butter and sugar are melted.
- When melted, take off the heat and gently stir in the oat mix.
- Scoop dessertspoons of cookie mixture, in ball shapes, place on your greased baking tray, with a small gap between each cookie, how many cookies on your tray will depend on the size of course.
- Cook in the oven for 15 minutes, once removed, leave to stand for 5 minutes, then transfer to a wire rack to cool.
- Repeat step six and seven until all your cookie mix is used up. You should not need to re-grease your baking tray at any point.
- Serve with a cup of tea or however you like!
These cookies should be stored in an airtight container and they last about a week!
I tried adding raisins to this recipe once and I found my cookies did not set after being cooked. If any readers find any twists to this recipe, please let me know!
