Chili and Cornbread - A Southern Favorite

A delicious alternative to ground beef chili, turkey chili is nutritious and delicious. Turkey has fewer calories than beef (or chicken) and has no saturated fat.

This turkey chili recipe is simple and can be made in your crockpot. You can make it as a hot (or mild) as you want, depending on which type of powdered chili seasoning mix you choose.

If you like, you can also make your own chili mix by combining one tablespoon each of cayenne pepper, paprika, cumin, oregano and garlic powder. Add more cayenne pepper and garlic if you like it spicy.


Delicious Turkey Chili

Ingredients:

  • 2 pounds lean ground turkey
  • 3 garlic cloves (diced)
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 large green bell pepper (chopped)
  • 2 large white onions (chopped)
  • 2 (35 ounce) cans stewed tomatoes
  • 2 (15 ounce) cans kidney beans (drained)
  • 1 cup chicken or turkey broth
  • 2 packets powdered chili seasoning mix
  • 1 tablespoon dried hot pepper flakes (if desired)
  • 8 ounces shredded cheddar cheese
  • 8 ounces sour cream

In a large skillet, brown ground turkey, along with diced garlic, salt and pepper.

Drain cooked turkey and place into crockpot along with remaining ingredients, except cheese and sour cream.

Cook on low for five hours.

Top with cheddar cheese and sour cream, if desired, and serve hot with cornbread.

Makes twelve servings.


Easy and Delicious

Easy Cornbread

If you are having chili, you have to have cornbread. This recipe is made with canned creamed corn and does not come out too crumbly.

Ingredients:

  • 1 cup yellow cornmeal
  • 3/4 cup all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup canned creamed corn
  • 1/4 cup vegetable oil
  • 1 egg

Preheat oven to 400°F

Grease a 8 or 9 inch square or round baking pan.

Whisk together all the dry ingredients.

Stir in creamed corn, oil and beaten egg until just moistened.

Spoon batter into pan. (You can also use muffin tins, if you’d like corn muffins instead.)

Bake 20 minutes or until inserted toothpick comes out clean.

Makes eight servings.

Something Fruity - Peach Bellini

If you are looking for a delicious drink to go along with your meal, try something fruity. One of my favorites is the Peach Bellini. Normally made with champagne and peach schnapps, I actually prefer this slushy variety.

Ingredients:

  • 1 part Champagne
  • 1 part Light Rum
  • 2 parts Peach Puree
  • Frozen peaches
  • Ice
  • Sangria

Combine all ingredients in blender, except sangria.

Blend until slushy. Add more ice until it is the desired thickness.

Serve in tall glasses.

As you pour the mixture into your glass, swirl in sangria.
