Turkey Vegetable Chili

Ingredients :
- ½ medium green pepper
- ¼ small onion
- 2 small zucchini
- 1 tsp olive oil
- 2 cloves garlic, minced
- 3 cups cooked, turkey or chicken, diced
- ¼ cup mushroom button (canned)
- ½ cup water
- 1 tbsp dried oregano
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 cup fresh whole tomatoes, cooked and crushed
- 1 (10-ounce) package frozen mixed vegetables
Procedure :
- Heat oil in saucepan over medium heat. Add green pepper, mushroom, onion and garlic; sauce 3 minutes stirring frequently.
- Add remaining ingredients except frozen vegetables and zucchini. Cover; when it boils, reduce heat to low and cook for 1 hour, stirring occasionally.
- Stir in frozen vegetables and zucchini; bring to a boil over medium heat. Reduce heat to low, and simmer uncovered 5 minutes until zucchini is tender.
Makes 6 servings.
