Turkey Vegetable Chili

Ingredients :

  • ½ medium green pepper
  • ¼ small onion
  • 2 small zucchini
  • 1 tsp olive oil
  • 2 cloves garlic, minced
  • 3 cups cooked, turkey or chicken, diced
  • ¼ cup mushroom button (canned)
  • ½ cup water
  • 1 tbsp dried oregano
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 cup fresh whole tomatoes, cooked and crushed
  • 1 (10-ounce) package frozen mixed vegetables

Procedure :

  1. Heat oil in saucepan over medium heat. Add green pepper, mushroom, onion and garlic; sauce 3 minutes stirring frequently.
  2. Add remaining ingredients except frozen vegetables and zucchini. Cover; when it boils, reduce heat to low and cook for 1 hour, stirring occasionally.
  3. Stir in frozen vegetables and zucchini; bring to a boil over medium heat. Reduce heat to low, and simmer uncovered 5 minutes until zucchini is tender.

Makes 6 servings.
