Two Quick and Easy Recipes
56Mexican Nacho Grande
This is a great recipe if you need to have a substantial, filling meal created quickly. It is also delicious!
You will need (For four people)
- Nacho Chips (Non Flavoured)
- Four chicken breasts
- Large tin of sweet corn
- Mexican bean mix of refried beans
- Large jar of salsa
- 100G Cheese
- Green Jalapenos
- Sour Cream
Simply:
1) Set the oven to gas mark 6 or 200 degrees C.
2) Cut the chicken breasts into mouth sized chunks and fry them in a pan until just cooked.
3) Chop the Jalapenos (of desired amount. If you don't handle spicy food too well cut up about half a jalapeno) into small pieces.
4) Take a casserole dish or similar and place a layer of nacho chips so they cover the bottom.
5) Place half of the chicken pieces on top evenly across the nachos.
6) Carefully distribute an even layer of half of the salsa on top.
7) Sprinkle a healthy dose of sweet corn and Mexican beans on top.
8) Sprinkle half of the chopped Jalapenos on top of the layer.
9) Grate half of the cheese on top of the layer and repeat.
10) Once you have two layers and you have used all of your ingredients, stick everything in the oven for 15-20 mins and then serve immediately.
Finly chopped Jalpenios
Get the Chilli's really finely chopped so you can sprinkle. This will give the food that spicy kick it needs without offending anybodys mouths!
Mexican BBQ Chicken Wraps
This is a very easily yet filling meal that you will be able to create within half an hour.
You will need: (For two people)
- Three Chicken Breasts
- A sticky, sweet BBQ Sauce
- Mexican Rice (You can buy this ready prepared nowadays)
- Four Tortillas
- Crispy Lettuce
- Cucumber
- Tomato
- 100G Cheese
Simply:
1) Take the chicken breast and dice into quite large chunks before frying.
2) While the chicken cooks, add a large amount of BBQ sauce so that the chicken is completely covered with enough sauce left to serve along side. Be sure to stir regularly so that the sauce does not stick to the pan. Once the chicken is cooked turn the hob onto the lowest heat and keep stirring at regular intervals.
3) Chop up your lettuce, cucumber and tomato so that they are in small pieces. Toss them thoroughly to allow the tomato juice to mix with the lettuce.
4) Grate 100G of cheese.
5) Heat the tortillas either in Clingfilm in the microwave or in tin foil in the oven until soft.
6) Once done, place all of the ingredients in separate containers and allow people to help themselves to create their wraps.
