Vegetable Rice

Here is a tasty Indian Rice recipe that doesn't use onion and garlic. Many Indians vegetarian people dont take onions and garlic. The rice recipe uses soya nuggets and mint for its unique flavour. A must try recipe. Its healthy for kids too since it contains soya, vegetable and rice (ie, proteins, vitamins, minerals and carbohydrate) to make it a complete wholesome meal.

Ingredients

Rice - 1 glass (200 ml)

Water - 2 glasses

Potato - 2 medium sized

Cauliflower - 6-8 florets

Beans - 10-12 sticks

Carrot - 1 medium size

Tomato - 2 medium sized

Mint leaves - one cup cleaned leaves

Soya nuggets - 20-25

Spices

Cinnamon - 2 sticks (2cm each)

Whole Black Pepper (12-15)

Fennel seeds - 1 tsp

Salt, Sugar, Turmeric and red chilli powder

Dice vegetables into 1/2 cm cubes.

Heat Oil and add the spices in a pressure cooker. Add the vegetables and mint leaves other than tomato. Add soya nuggets. Fry till brown. Add Tomato. Add salt, turmeric powder, red chilli powder as per taste and colour. Add the rice. Fry slightly. Add water as per requirement. Add 1/2 tsp suger.

Close the cooker and give one pressure. Keep aside till the cooker opens. Your Vegetable Biriyani is ready.

Serve it with raita / yoghurt.
