Vegetable Samosa

Outer crust:
8 small sized floor tortillas- cut equal into halves
1 tablespoon water
Filling:
vegetable oil for frying
3 medium sized potatoes- boiled until tender and easy to mash
salt to taste ~ 1/2 to 1 tsp
1/2 tsp red pepper
1 tsp mango powder (preferred), or 2 tsp lemon juice
1 tsp MDH chunky chat masala (optional)
1 teaspoon coriander powder
1 teaspoon cumin -lightly roasted in a pan
1 small red or yellow onion, finely chooped
2 fresh green chilli peppers
2 tablespoons of fresh cilantro- finely chopped
1 teaspoon of fresh mint leaves (optional)
Cut potatoes into small cubes. Mix it with all the above ingredients. May mash potatoes just a tiny bit.
Now take the half tortilla. Make a cone for the filling.
To make the cone start folding from the middle of the base (the straight side, not the circular side).
Wet at the seam in middle with a little water, and press both ends to together to make the cone form. Put 1-1/2 to 2 table spoons of filling in the center. now wet the sides above it, to close it and put on the side until all 16 smosas are done.
Then heat the oil and fry until crust is golden as above. May serve with tea, or as an entree. Can serve with mint chutney, tamarind chutney, or ketchup, ot channa.
