Hi, this is my first Hub article :) 

As being a student and also a vegetarian, I spent many years searching for recipes that are fast, easy, cheap, healthy and delicious. Sounds hard to achieve, but there are a few.



1) Imam Bayildi

This mid-eastern meal is so delicious that it's name means "Imam Fainted", as the meal was so yummy. It is also both easy to make, and relatively cheap.

Ingredients (for two people):

  • eggplant (medium size) - cut in half, strip the inner part and salt it, than leave it for 30 minutes to lose bitterness
  • onion - sliced
  • garlic - chopped
  • fresh paprika - sliced - 2 pcs
  • olive oil
  • salt, pepper, parsley, other spices at taste

On olive oil saute the onion and garlic, add fresh paprika. Later add spices. When sauted, remove from the pan, and put back the eggplant flesh side down in the same pan for few minute, just to get some flavor and cook a little bit.

Spread olive oil in casserole, put eggplant halves in it, and cover them with sauted onion-paprika mix. Put the pan in the preheated oven at 420°F for about 20 minutes.

Serve warm, with rice.

Another versions include tomatoes, no onion and many other combinations. Feel free to explore.

2) Spring pot

This is a silly name we came up with for this "meal". Actually, ingredients are not fixed, it's only important to remember that you can always just put things to cook, and still have a nice, healthy dinner. The key is in seasoning. We season it with olive oil, salt, pepper and chopped garlic.

Here's the list of vegetables that could be used to make the "Spring pot", in order of which one needs most time to get cooked:

  • potatoes
  • carrots
  • beetroot
  • broccoli
  • cauliflower
  • zucchini
  • cabbage
  • corn

Usually we use 3-4 of them. Serve it with cheese, tofu or seitan and bread.

3) Rice with vegetables

Similar to the "Spring pot", but this recipe uses up some other vegetables you may have at your disposal.

Saute on olive or vegetable oil any of these if you have them at home (in order of what should go first):

  • onion
  • garlic
  • mushrooms
  • carrots
  • eggplant
  • zucchini
  • tomatoes 
  • corn

When finished, add rice and some water. Spice it up with salt, pepper, parsley, myrth or any other as you prefer.

4) Vegetarian Stroganoff

This is a super fast, and very delicious meal if you buy already made gnocchi or pasta. Also, you may try making your own, much tastier gnocchi if you wish.

For the sauce you'll need:

  • mushrooms sliced (different kinds of mushrooms will be better)
  • young onion sliced
  • olive oil
  • cooking cream
  • brandy - few drops
  • salt, pepper, paprika, parsley, myrth,...

Saute the mushrooms on olive oil, add salt. Than add the young garlic. When it softens pour few drops of brandy, and add other spices. Add cooking cream until it boils.

Serve with gnocchi, pasta or rice.

5) Spicy lentils with yogurt

This is a meal that you leave to cook on its own. Other good feature is that you'll combine two ingredients that doesn't really seem as a pair at the first glance, but you'll get an astonishing couple! Spicy lentils and yogurt do make a great pair, indeed.

Ingredients:

  • lentils
  • garlic
  • onion
  • olive oil
  • spices: salt, pepper, curry, cumin, mustard seeds, coriander, white pepper
  • yogurt (creamy one is the best)

Cook lentils in water with nothing addad. Pour water away, and mix the lentils in a food processor. You may add a little bit of water, if needed.

On olive oil saute garlic and onion, and add lentils. Cook until boils, and than simmer for another half an hour. Add spices to taste, but remember it has to be spicy.

Serve with yogurt aside, so that everybody can add some yogurt into their own plate.

6) Pottages

Pottages are so undrvalued in last days, but there's no good reason why. They're incredibly easy to make, not time consuming, very nutritive, cheap and tasty.

  • lentils pottage
  • parsnip and bean pottage
  • pumpkin pottage
  • barley pottage
  • buckwheat pottage
  • cabagge pottage
  • green peas pottage
