Risotto with Asparagus and Fava beans


CONFETTI VEGETABLE* RISOTTO

3 tbls olive oil

3 cups of white wine

2 cups Arborio rice

2 diced shallots

5 minced garlic cloves

3-4 asparagus

3-4 carrots

2 zucchini

1-2 red bell pepper

1 Tsp each of dried thyme, basil and oregano

Salt to taste

6 cups of vegetable broth

3 cups of shredded parmesan

Chop vegetables fine. Sauté shallots and garlic in olive oil. Add rice and stir until coated with olive oil. Lower heat to medium low. Add one cup of wine at a time, until absorbed by rice, stir continuously. Then add broth one cup at a time, until absorbed by rice. Keep stirring. Add vegetable and cook on low heat for 5 minutes. Toss with parmesan.

* you can substitute just about any combination of vegetables. Fava beans and asparagus is a favorite.
