Tofu is one very good source of protein for any vegetarian, unfortunately many people do not know how to cook it. They'll try it out and find that it tastes horrendous, even though likely the big reason why it wasn't good was because of their method of preparation.

If at first you try tofu and don't like it, strongly consider giving it a second chance. Either switch the brands you buy or else look for a new recipe. There are so many varieties out there that you have many different options. Plus you can eat it for any meal you like, from breakfast, to snacks, to main courses and finally dessert. The opportunities are really endless therefore it really does fit well in any vegetarian's menu.

Below are some great breakfast tofu recipes to try out.


Thai Tofu "Eggs"

1 block extra-firm tofu

1 onion, diced

1 bunch spinach

2 tbsp vegetable broth

¼ cup peanuts

2 tbsp water

1 tsp soy sauce

1 tbsp peanut butter

1 tsp olive oil

1 tbsp brown sugar

Begin by draining the tofu and then crumbling with a fork into a pan as above. Next transfer it to the skilled and add the vegetable broth. Cook until the tofu looks slightly brown. Next add in the diced onion and peanuts and continue to sauté until the onion is tender. Combine the soy sauce, water, peanut butter, olive oil and brown sugar in a small bowl and then pour into the skillet. Stir until contents are coated and then add in the spinach and cook for about 2 minutes to let flavours blend together.

Mediterranean Tofu Scramble

1 block extra-firm tofu

1 diced onion

4 oz. canned tomatoes

½ cup bunched spinach

1 tsp basil

½ cup mushrooms

5 olives

¼ cup salsa

sprinkle of chilli pepper

Begin by draining some extra-firm tofu and then crumbling it in a large bowl with a fork. Once you've done this transfer it to a skillet that has been sprayed with some non-stick cooking spray or olive oil. Cook until the tofu is lightly brown. Next add in your diced onions and tomatoes. Stir until they are mixed in and then add in spinach, basil, mushrooms and a few olives. Continue to cook for 5 more minutes to let flavours blend together. Lastly, top with ¼ cup salsa and a small sprinkling of chilli powder.

Raspberry Tofu Smoothie

6 oz silken tofu

1 medium banana

2/3 cup soy milk

1 cup frozen raspberries

1 tbsp honey

2-3 ice cubes (optional)

First drain the silken tofu to remove the excess water. Next slice the banana to make for easier blending and then add it into the blender along with the tofu and soy milk. Blend for approximately 30 seconds. Add in the ½ cup frozen raspberries and continue to blend until the drink is smooth. Lastly, add in the honey and ice cubes, pulsing to crush the ice. Serve immediately.

So next time you are looking for something for breakfast and are tired of veggie dogs or sausage, give tofu a try. You might just be surprised how great it actually tastes!
