Vitamins are classified as either fat-soluble (lipid soluble) or water-soluble. Vitamins A, D, E and K are lipid-soluble and accumulate within the fat stores of the body and within the liver. Vitamins are unstable and can be destroyed during the cooking or processing of foods. Heat in combination with water can remove water-soluble vitamins from food. Vitamins are involved in many processes that enable your body to use carbohydrates, fats and proteins for energy and repair. Though vitamins are involved in converting food into energy, they supply no calories.
Water-soluble vitamins must be taken into the body daily, as they cannot be stored and are flushed out within one to four days. Fat-soluble vitamins can be stored for longer periods of time in the body's fatty tissue and the liver. Water-soluble vitamins, however, are only stored in the body in trace amounts, and it is, therefore, not believed to be beneficial to consume excessive amounts of the substances. Indeed, most of the surplus of a water-soluble vitamin exits the body in urine, resulting in the need of consuming the same vitamin on a daily basis in order to maintain sufficient quantities. Water-soluble vitamins are different. When you eat foods that have water-soluble vitamins, the vitamins don't get stored as much in your body.

Some of the functions that could not take place effectively without them are reproduction, cell division, digestion, blood clotting, energy production, etc, etc. Vitamins are important to our well being and overall health.
