WTF Can I Make With That: Meatloaf

Ingredients

  1. 2lbs of meat (either pork and beef, just beef, turkey and beef, or prepackaged meatloaf mix)
  2. 1 package of meatloaf seasoning (McCormick makes a good one and almost every grocery store has a generic)
  3. 1/2 of an medium sized onion
  4. 1 clove garlic
  5. 1 1/2 cups diced bell pepper (fresh or frozen)
  6. 1/2 cup flax seed meal
  7. 2 eggs
  8. 6 ounces of tomato paste
  9. 8 ounces of BBQ sauce
  10. 1 tbs garlic powder
  11. 3-4 slices of bread (its to put under the loaf to soak up the grease so it does not matter what kind...although raisin cinnamon swirl bread would add an odd aroma and I would imagine an unpleasant flavor... so any kind BUT that.)
  12. 2 tbs Italian seasoning (or just Oregano)
  13. Salt and pepper (I prefer garlic salt)



Instructions

  1. Preheat oven to 375
  2. In a food processor blend  the onion, garlic, bell pepper, seasoning packet, garlic powder, and Italian seasoning, flax meal, and eggs.
  3. In a large bowl mix meat and blended mixture together using a spoon or your hands. (I like having non-latex disposable gloves in my kitchen for tasks like this)
  4. Form into a loaf mold either by hand or using a large bread pan.
  5. Line a metal or glass sheet cake pan with foil (for easy clean up)
  6. Put 3-4 slices of bread side by side in the pan (enough to support size of the loaf)
  7. Put the loaf on top of the bread and lightly salt and pepper the outside of the loaf
  8. In a small bowl mix the BBQ sauce and the tomato paste (add a few spices to give it more zing if you would like)
  9. Spread the BBQ sauce mixture on the top and sides of the entire loaf (like you are frosting a cake...it will be thick...use it all...don't be shy)
  10. Bake in the oven for 1 hour or until the inside of the loaf measures 160 for a beef/pork mix, 170 for a loaf containing turkey. Mine usually take 1 hour and 20 min, but your time may vary.
  11. Let the loaf rest for 5-10 min covered lightly in foil.
  12. Remove the loaf from the pan and place on a cutting board, remove any slices of bread that still might be clinging to it. :)
  13. Slice, serve with tater tots or tater-nots*!


* Tater-Nots:

1 bag of cauliflower florets steamed until tender blended in a food processor with 1/2 cup sour cream, 2 tbs butter, garlic powder, pepper and salt to taste. For richer tater-nots replace sour cream with 1/3 package of cream cheese.
