What? Are You CHICKEN??: Tasty Chicken Meatballs with Colorful Cabbage Bowl Salad

Variety is the Spice of Life

 When you're on the Candida diet, you find yourself longing for something different.  Variety of flavor does wonders for hunger.  This recipe is chicken meatballs and a cabbage bowl salad made with cucumbers and radishes.

Ingredients:

  • 1 lb. ground chicken
  • 2 eggs
  • 4 Tbs. garlic pepper
  • 4 rice crackers
  • 2 cabbage leaves
  • 4 slices cucumber
  • 4 radishes
  • 4 Tbs. Oil
  • 2 Tbs. Lemon Pepper Salt

Directions:

  1. In a skillet heat 2 Tbs. oil.
  2. Mix ground chicken with 2 beaten eggs, garlic pepper and crumbled rice crackers.
  3. Drop large spoonfuls of the meat mixture into the hot skillet.
  4. Cook for about 2 minutes and flip.  Cook another 2 minutes.  Flip, and remove from heat after 1 minute.
  5. Set meatballs aside.
  6. Remove two cabbage leaves from the head of cabbage.
  7. Layer, so the leaves make a bowl.
  8. Cut cucumber slices into fourths.
  9. Cut radishes into eighths.
  10. Put both cucumbers and radishes into the cabbage bowls.  Drizzle with oil and sprinkle with lemon pepper salt.

This is a complete meal, but you can mix it up and serve the elements with other things, too.
