Hi RVilleneuve, nice to read this hub on golf attire.
Most golf courses all over the world over do have rules of attire. The only exception I have seen is some of the public courses in the US, where one can play even in jeans and sandals. But even in the US, the rules are pretty strict in some of the tony country clubs: From collared T-shirts for the men, to shorts within so many inches above the knee, shirts tucked in, no metal spikes, socks/stockings with designs or without ... it does get a bit complex!
I like to make myself as comfortable as possible, but within the confines of the old maxim, "When in Rome do as the Romans do." Get aquainted with and follow the rules and customs/traditions of any new course you might go to play at, so to avoid embarrassment to yourself and to your host.
I agree with you about the new moisture wicking fabrics being great, but I do prefer cottons, at least in the summers. And, my favourite shoes are the Footjoys too ... not their Myjoys, but the good old eComfort. I find them to be the most comfortable.
Equally important are the socks, the innerwear, the face towel. I have never heard of specifications being laid for the latter two, but they are paramount to your comfort and enjoyment of the game on a hot summer day. And nothing to beat soft cottons. :)
