The Day After

So it is the day after Thanksgiving and your fridge is full of leftover Turkey. By now your family is tired of turkey and is saying "Hey lets order in for Pizza! Here a few suggestions to help you utilize and spice up your leftover Turkey. Your family may not even realize they are eating it!

Turkey Enchiladas

 Need I say more?  I wont bore you with the recipe.  Just use the Turkey as you would chicken!


Buffalo "Turkey" dip

 I have featured this recipe in another hub using chicken.

  •       two cups of Turkey's white meat (finely shredded)
  •       one bar of cream cheese (softened)
  •       one half bottle of Franks Red Hot sauce (or so)
  •       Couple handfulls of shredded cheddar cheese
  •       I package of good seasons dry mix

Mix all of the above in a sauce pan on stove.  Pour into cooking dish top with more shredded cheese and cook for fifteen twenty minutes at 350.  Serve with Tortilla chips!



White Christmas Chili

 This is  my favorite as I can throw everything in the crock pot and let simmer all day.

Ingredients

  • Shredded Turkey (dark or white meat)

  • two cans of chicken broth

  • two cans of great northern beans (one can can be mushed up before adding to crock pot)

  • one small can of jalapeno peppers, sliced

  • add red cayenne pepper to taste

  • add chili seasoning to taste

  • one cup or so of chopped celery

  • one cup or so of chopped onions

Simmer all day.  Top with shredded cheddar cheese and chopped green onions.  Serve with Tortilla chips!

Great ideas! I'll be roasting two huge turkeys tomorrow, and I'll bet I'll have a load of leftovers to try these recipes!
