Do you love to bake and would like to start a business but aren’t too sure of your skills? Are you already a master at cake decorating and want to further your knowledge? If so, then consider taking classes at the Wilton School of Cake Decorating and Confectionary Art located in Darien, Illinois, near downtown Chicago. The school was begun by Wilton Food Crafts of Woodbridge, Illinois to help people expand their cooking and baking knowledge and share the art.

There, you’ll learn all about the “Wilton Method” among many other extraordinary talents. No matter if you’re just learning or want to expand your knowledge base, learning the Wilton cake decorating methods will give you techniques and skills that you’re bound to use in every day baking.

There are four core values that the school administrators want to instill in its students. These values include:

  • Having hands-on learning with help from an experienced professional.
  • Excellence in their work.
  • Inspired creatively.
  • Continuous learning of skills.

Dewey McKinley Wilton introduced the Wilton Method, which now uses both the Australian and English approaches along with gum paste and sugar techniques.

So what does the Wilton School present to its students?

  • Introductory classes that will give students a foundation
  • Advanced classes that introductory students can move to or professionals can take to get a refresher course of knowledge.
  • Masters program that teaches the basic techniques in a four-weekend or two-week schedule.
  • Workshops available in one day or three-day sessions, which offers students to learn a special skill and more.


Introductory Wilton Classes

Are you ready to learn how to do the basic Wilton cake decorating course? If so, then what you’ll learn during the one to five day course is the following information:

  • Gum paste
  • Sugar art
  • Creative confections
  • Rolled fondant
  • Isomalt design

Advanced Wilton Classes

Advanced classes were created to further enhance the skills professionals and baking enthusiasts had for Wilton cake decorating classes. These classes can last anywhere from one to five days. Some advanced Wilton cake decorating classes include the following:

  • - Sugar art
  • - Chocolate art
  • - Novelty cakes
  • - Stringwork and borders
  • - Tiered cakes and more

The Wilton Master Course

When you have passed the Introductory and Advanced Wilton cake decorating classes, it’s time to take the Master Wilton Cake Decorating class. This course is available to anyone of any level who wants to learn more about cake decorating. Take the course as a two-week program or take it as four-weekend schedule. This course teaches students four different things such as:

  • Necessary skills that enable students to decorate any special occasion cakes
  • Learn how to make a wedding cake with three-tiers
  • How to make 15 different flowers
  • How to make 20 different borders

There’s also the option to take additional special classes to learn more about how to decorate cakes. For instance, there are four techniques that a person can learn such as:

  • Gum paste
  • Confections
  • Sugar art
  • Rolled fondant

Once the program is complete, a certificate is then handed out for the main Master course and the additional special course, if it was taken. The Master courses are generally offered one to two times a month, much of the year.


One and Three Day Workshops

Three-Day Wilton Workshops


If you don’t have the time to do a major course, consider enrolling in a three-day workshop instead. The three day workshop is designed to provide 18 hours of classroom instruction for a certain skill. Best of all, supplies are provided for the workshop. Topics taught include:

  • Complex techniques like airbrush design, inlaid fondant, cake sculpting and more.
  • Decorating cakes for children 10 and over.

One-Day Wilton Workshops


There is six hours worth of instruction in a one-day workshop, which aims to teach people of all skill levels on a variety of topics including:

  • The basics of baking
  • Icing and decorating
  • Creating and designing cupcakes
  • Creating three-dimensional flowers using gelatin; this method was developed in Mexico.
  • Using fondant, with brushing, color, cutting, stamping and shaping.

my two daughters and myself signed up the summertime wilton cake decorating, course 1 at joanns. thought it would be fun. But BEWARE! the cost for required supplies over and above the course cost was surprising and costly. course cost $35, course kit $25, course book $5, additional supplies including cake carrier, piping gel, coloring, parchment paper, cardboard rounds, leveler, flower lifter, cake mixes, powdered sugar, shortening, meringue, etc. $125. furthermore, the time to shop for and prepare a two layer leveled and filled cake plus scratch icing in varying consistency and colors for frosting and decorations for each class became way too much work. then there was the time to clean up before and after class took hours. the icing is difficult to breakdown and messy. lastly we were disappointed with the instruction. it felt more like reading from the book. was very difficult to keep up with her. she would move on even though students were individually struggling with previous tasks. looking back, there was so much more the instructor could have shared to make things easier to prepare and follow her. i guess i understand now why there was no place to rate these classes thru joanns or wilton.
