Here’s a dinner that’s quick and very hearty for cold nights. The casserole couldn’t be easier and it cooked totally on the top of the stove. That will leave the oven free to cook the delicious crumble. It’s a hearty, well-balance meal.
You may substitute chicken for the turkey, although the turkey is very healthy and good in this dish. For the crumble, other types of berries (raspberries, blackberries) may replace the blueberries.
TURKEY CASSEROLE
You will need:
1 ¼ lb turkey breast fillet
2 tbsp flour
1 tbsp olive oil
1 medium onion, peeled and cut into wedges
2 -4 cloves of garlic, peeled and slices
1 large red pepper, deseeded and slicked
1 tbsp soy sauce
½ pint red wine
½ pint chicken stock
8 oz zucchini, trimmed and sliced
Cut the turkey fillet into small bite sized chunks and toss in the flour. Heat the olive oil in a large frying pan and sauté the onion and the garlic for 3 minutes before adding the turkey and continuing to cook for another 5 minutes or until sealed.
Add the red pepper, the soy sauce and the honey and stir well. Pour in the wine and chicken stock, then bring to a boil. Reduce the heat to a simmer, cover with a lid and cook for 10 minutes, stirring occasionally. Add the zucchini and continue to cook for a further 10 minutes or until the turkey is tender. Serve with mashed or boiled potatoes and a green salad. Something really nice with this would be mashed sweet potatoes. Serves four.
BLUEBERRY AND APPLE CRUMBLE
You will need:
8 oz flour
4 oz unsalted butter
4 oz uncooked oats
1 tsp cinnamon
2 oz chopped almonds
2 oz sugar
1 ½ lbs cooking apples, peeled, cored and sliced
8 oz blueberries
1-2 tbsp clear honey
Preheat the oven to 375 degrees, 10 minutes before cooking. Reserve 2 tbsp of the flour and sift the rest into a mixing bowl. Add the butter and rub it until the mixture resembles fine bread crumbs. Stir in the oats, cinnamon, almonds and sugar. Put aside.
Place the apple slices and blueberries in a 2 pt ovenproof dish. Sprinkle on the reserved flour and pour the honey over. Spoon the crumble topping on top and press down lightly. Place on a baking sheet nad bake for 25 to 30 minutes or until the apples are tender and the topping is golden. Serve plain, or with whipped cream or vanilla ice cream.
