Peanut butter
Cinnamon

Here's what you'll do...
Scrub your sweet potato thoroughly. Cut both ends off and poke holes in the potato with a fork. Set it in the casserole dish, and pour Brita water over it until the water is about an inch deep or so in the dish.
Microwave the sweet potato on HIGH for 5 minutes. Poke it with a fork to see how done it is. It is surely not done yet! Turn it over, and microwave it for another 5 minutes. Keep doing this until the potato is soft through-and-through when you poke it with the fork. This may take up to 20 minutes or more, altogether, depending on the size of the sweet potato. Your water will evaporate during this process. Don’t let it dry out completely. Add more as needed. The water keeps the sweet potato from drying out and keeps the skin soft enough to eat if you wish. If there is any water left in the dish when the sweet potato is done, just pour it off.
Transfer the sweet potato to a plate or bowl (or leave it in the casserole dish if you want to). Cut it open just as if it were a baked potato and mash it up a little bit with a fork. Load it up with peanut butter, cinnamon, dried fruit and nuts, and honey or molasses to taste. If you are eating it as a meal, you may not want it so sweet. If your meal was a salad, you can use this as a healthy, nutritious dessert.
Sweet potatoes are incredibly good for you, supplying antioxidants, nourishment, and lots of roughage (especially if you eat the skin as I do!)
This simple recipe makes a quick, easy, satisfying, economical meal for one.
