If you're anything like me, more than likely you get tired of the same old soggy breakfast cereal and the slimy porridge oats that tend to  make you almost upchuck as it's sliding down your throat. You're not the type that can run the full morning on just a small pot of low fat yogurt, nor can you just go and grab a slim fast and head out the door.

I am definitely the type that needs a hearty breakfast but without the feeling of being sloth throughout the day.

This Banana Bread recipe is a really great modification I've made from a more traditional recipe. It's soft and moist and will curb your hunger untill your next meal time (in my case this would be brunch..) Give it a try!

Ingredients:

1 1/2 cups Spelt flour

1/4 tsp Salt

1 tsp Baking soda

1 cups Granulated sugar 1/2 cups Butter @ room temp (earth balance)

2 Bananas (over ripe)

2 Eggs (see egg replacer below)

1 tsp Vanilla extract

Method:

  • Tip:For the eggs use 2 Tbsp flaxseedmeal w/ 6 Tbsp water blend in a food processer or blender untill smooth
  • Pre-heat oven to 325 degrees F and grease a 9x6 inch loaf pan.
  • Break or cut up bananas in pieces and mash with a fork.
  • Put all the ingredients in a large mixing bowl and beat with a hand held mixer untill smooth. About 2-3 mins.
  • Pour into your greased loaf pan and bake at 325 degrees F for about 45 mins or untill toothpick inserted comes out clean.
  • Enjoy!!
