Simple Breakfast

 

It's healthy, it's whole and it fills us up. The breakfast burrito. (In case you forgot about it ~~ like Ken and I do from time to time ;)

Breakfast burritos are simple and easy to make. They are a great alternative to the typical eggs and toast breakfast. And when you lead a busy life, they are a great way to ensure that you are eating whole and healthy while eating on the run.

I find that they are also great when eating on a budget. Simply look in your fridge to see what's available and go from there.


Get your toppings ready. This time we used brown rice, salsa, soy cheese, green pepper and onion.

The brown rice was cooked in water seasoned with Bragg's Liquid Aminos, pepper, salt, and garlic powder. My salsa recipe is linked above and the soy cheese, green pepper and onion were already prepped; leftovers from fajitas the night before.

Even though the cheese is made from soy, it is still processed. If you are eating a mostly whole foods diet, it's not something you would want to eat everyday. I eat it a couple of times a month, Ken eats it a couple of times a week.


Scramble some eggs. These are from happy chickens who got to run around the farm ;) Ken likes eggs, but if I have some "Dry Fry" tofu in the fridge, I use that instead.


Pile it all up on the whole wheat tortilla and wrap it up.

These wraps are portable and easy to warm up in the microwave. I eat them in the car on the way to work as well as packing them for lunch. They're a great way to make sure that I at least eat two healthy meals a day. Enjoy!
