Easy Recipe- Breakfast Wrap- Banana/Yogurt/Granola

Here is a recipe that I’ve been particularly obsessed with lately. After years of running late for school or work and slopping some peanut butter on a piece of toast to devour messily in my car, I finally started trying something new.
Here are the contents you’ll need to mix together:
1. Banana slices. For this recipe, I’ll say 2 bananas, but you can definitely just make 1 and plan accordingly, and you can obviously use more than 2.
2. Vanilla yogurt. My suggestion? Go fat free. With all of the other delicious flavors in this wrap, you definitely won’t be able to tell the difference, so you might as well forget about those empty calories. Anyway, with 2 bananas, you’ll want to use about ½ a cup, but, as always, you can use more or less depending on your yogurt preferences.
3. Honey. About 2 teaspoons.
4. Granola. Here is where things get fun. Have you been to your grocery store lately and wandered down the granola aisle? WOW! Seriously, you can choose ANY kind of granola for this wrap, and I definitely suggest switching off if you find yourself making this breakfast treat all the time (like I do). I am currently obsessed with an “apples and blueberries” granola, which actually has dried blueberries in it that are wonderful once mixed in with the yogurt. I’ve also discovered the wondrous “summer berries” granola, but they all sound amazing to me. The granola adds not only great flavor to the wrap but also the delicious crunch. You’ll want to use about a cup of whichever delicious mixture you choose.
Now that you’ve mixed it all together, you’re just about ready to put this filling onto your tortillas and wrap. BUT, first, you want to spread a very thin layer (about 1/8 cup per 10” tortilla) of peanut butter on each tortilla. Then, you can put your filling in (make sure you don’t put too much so that you can’t wrap it) and wrap. This recipe will fill about 2 10” tortillas, and that will make you a HUGE breakfast (…or lunch…or dinner) burrito. Tip: Heat the shells in the microwave for about 10 seconds before you spread the PB. This will not only make the spreading easier but also the wrapping!
Ok, so here is why this wrap is so amazing, besides the fact that it’s mouth-watering. You can eat it right after you make it, but you can also make it the night before (this will all take you not even 10 minutes) and grab it from the fridge in the morning. The only disadvantage there is that the granola loses its crunch.
If you’re like me and you can’t stomach a very large breakfast, use small tortillas. This recipe will make about 4, and the small wrap will be much neater if you’re in a hurry…and easier to eat while driving, if you’re one of those on-the-go people.
Finally, keep things interesting. I already said switching granola flavors is an easy way to mix things up, but you can also try out different flavors of wraps that you think might complement the filling nicely. I’m even planning on trying a different flavor yogurt, and I’m definitely buying strawberries and blueberries the next time I’m at the market to mix in with the bananas…but I might scrap the peanut butter. Hmmm…maybe I’ll use Nutella instead.
