Yorkshire Puffs: Puffy Popovers

When you want a little something different to serve with dinner, Yorkshire puffs make a nice addition to the menu.

Yorshire puffs or popovers are a great accompanyment to roast or turkey dinner. Pop these into the oven, watch them magically puff up, and serve with butter or gravy. These whip up quickly and your family will request them often.

Making Yorkshire Puffs

Place into blender or food processor:

3 eggs

1 cup milk

1 cup sifted flour

1/2 tsp. salt.

Set blender on high and beat until frothy, 1-3 minutes. Pour into muffin tins that have been sprayed with PAM (Make sure you do this because puffs will stick using other oils). Fill tins about half full with batter.

  • Bake in a hot oven (400 degrees) about 30-50 minutes, until puffs are golden brown. Reduce heat, as needed, if you test middles and find they are still raw.

  • Popovers need to bake long enough to hold their shape.

  • Remove from oven. If puffs have to sit for any length of time, make a small slit in the side to let steam escape.

Many people enjoy making a slit in the top of puffs and filling with gravy; alternatively, these are good spread with butter.

Popovers can be cooked for breakfast or brunch and filled with strawberries and whipping cream, or served with butter and jam or butter and syrup. The well in the center of the puffs is a good place for syrup.

Serving Ideas

  • Fill puffs with berries and top with whipping cream
  • Fill puffs with fruit cocktail
  • Fill puffs with custard and fruit for popover trifle.

If you are serving puffs with fruit inside, serve immediately so they don't become soggy.
