You Do? Candida Do!!: Oat-Fried Chicken Strips, Sweet Potato Chips and Guacamole

Feast Like a King

 Chicken strips with no flour or milk??  Think again!!  These chicken strips are super delicious and crispy, and are made with oatmeal, eggs and rice milk.  Served with tasty sweet potato chips and homeade guacamole, this meal is a winner in more ways than one!!

Ingredients:

  • 2 thawed chicken breasts
  • 1-2 eggs
  • 1/2 cup rice milk
  • 1 cup raw oatmeal
  • Garlic pepper
  • garlic salt
  • 1 medium sweet potato
  • oil
  • 1 avacado
  • 1 large clove garlic
  • 2-4 Tbs. coconut oil

Directions for Chicken Strips:

  1. In a skillet, pour oil until it completely covers the bottom.  Heat.
  2. Pour oats onto a plate.  With hands, crumble oats to make powder.  **Big chunks of oats are fine.  Just try to vary the texture.**
  3. Add garlic pepper to the oats.
  4. In a bowl, combine rice milk and eggs.
  5. Cut chicken breasts into strips.
  6. Coat each strip with egg mixture, and then press oats into each side of the strip.
  7. Carefully drop strips into oil.  Cover the skillet.
  8. Cook until brown on both sides, flipping once with tongs.

Drections for Sweet Potato Chips and Guacamole:

  1. Wash potatoes well.
  2. Cut into thin strips.
  3. Put strips into a bowl and pour oil over it.  Coat each strip with oil.
  4. Lay strips on a cookie sheet or stone.  Sprinkle garlic salt evenly over all strips.
  5. Bake in a 375 degree oven for 15 minutes.  Turn off heat and let sit in the oven for 5 more minutes.
  6. For guacamole, wash one avacado.
  7. Mince one large clove of garlic.
  8. In a bowl, mix avacados and garlic.  Add coconut oil.  Sprinkle salt over the mixture.

Hint:  The Chicken Strips and Sweet Potato Chips will last for another meal, but eat that Guacamole up, because it will not stay fresh very long!!
