Barramundi Fishing in Australia Here are some facts

Some one said they. “Would like to come and do some Barramundi fishing in Australia.”

That means you will need to do a Baked Barramundi for dinner followed by the Summer Pavlova Sweet (See Photos)

You will need a visa and lots of sun screen. We have it hot in Australia for the next four months.

Don’t forget you will want to see a Kangaroo and the Koala and if your lucky an Ostrich. Even experiment driving on the other side of the road. I did it in San Francisco, till the children told me I was not driving in Australia... (That is another story)

The Barrier Reef is another must.

Your appetite has been wetted, don’t let yourself down. Start doing more Hubs and get paid for them Good Hubbing. Plan on winning the Lottery.

Do it with ENTHUSIAM.

Baked Barramundi

Ingredients: -

2 kg whole Barramundi

2 cups Prawn meat (finely ground cooked)

1 egg (beaten) 1/2 cup cream

2 tablespoons Sherry

2 Tablespoons finely chopped mushrooms

Salt and pepper to taste

Extra ½ cup cream

Note: - Barramundi was Priced at $AUD36.00 per Kilo

Method

Preheat oven to 180 C (350F)

Scale, clean and rinse Barramundi.

Wipe dry with paper towels.

In a bowl mix prawn meat, egg, cream, sherry,

mushrooms salt and pepper.

Stuff the cavity of the fish with this mixture

and secure with skewers.

Place the fish in a greased baking dish.

Pour over the extra cream and bake for

45 -60 minutes or until fish flesh is flaking.

Carefully lift fish onto serving platter,

Remove the skewers.

Stain all the pan juices over

You should serve the Barramundi immediately.

Serves 6

Summer Pavlova Roll

Ingredients

4 egg whites

¾ cup Castor sugar

½ teaspoon Vanilla Essence

1 tablespoon Castor Sugar (extra)

1Teaspoon Cinnamon

½ cup Slivered Almonds

½ cup Cream

1/2 cup

3 passion fruit (lightly Whipped) Pulp

1 cup slice fresh summer fruits (Strawberries, peach, pawpaw)

Extra whipped cream or ice cream for serving.

METHOD

Beat egg whites till stiff, gradually add sugar to

Form a smooth Meringue, add vanilla.

Spread mixture over creased foil-lined

35 X 25 Cm (14 X10 Inch) Swiss roll tin,

Sprinkle with the combined extra sugar

add cinnamon then almonds.

Bake at 180 C (350 F) for 8 to 10 mins till

The meringue is firm.

Turn onto another sheet of greaseproof paper,

Allow to stand for 3-4 Minutes to cool slightly

Quickly spread with cream top with passion fruit and the other fruits.

Roll up and refrigerate until required.

Cut in 25cm slices and serve with whipped cream or ice cream.

Serve 6

Hey MrMarmalade, thanks for sharing...you sure do know how to get the juices flowing...barra is one of my all time favorites, heck of a good feed straight from river onto the camp fire. The only thing is you gotta be quicker than the crocks...I wish you all the best joys and fun for the holidays, lots of health, happiness and new adventures for 2008 with continued success.

Austrailia sounds like it would be a great destination for a vacation. Maybe one day I'll venture out that far. I think I like everything but the skydiving. That's no good for me, too easy for something to go wrong.

I must admit it was hard for me mentally getting out on the wing of the plane, I have a gamy leg and that leg did not want to leave the cockpit.

It is purely mental. Your mind plays funny tricks on you. Once you start down those mental concerns disappear.

It was incredible

you have 1/2 cup then on the next line you have 3 passionfruit etc. or does that mean how much passionfruit ..... Thanks Have a great new 2008

Apologies I got so enthusiastic that I included and extra 1/2 cup of nothing. Draw a line through it, it is not supposed to be there.

To make up for this horrendous blunder on my part. I have ordered a moving walkway across Australia. I ordered it through your Western Australian and the NSW Governments. Your WA Gov said maybe about the year 3015, whilst our energetic NSW Gov, thought they had better think about this project for another 2000 years. I forgot by then the price would have trebled through bad management, It can not possibly be available for 10,000 years.

So I think the best solutuion is get on your motor bike and ride across.

Please enjoy to night and have a better 2008 than ever.

neat hub. the fishing threw me off but I was lured in, so to speak, by the irresistable picture of the Baked Barramundi. that looks delicious. then, going through it, the sunset pictures were just lovely and the info was interesting. :)
