These cheddar corn muffins are a great addition to any simple meal. I like to make them to serve with chili, with chicken, or with soup. They are so easy to make and the added protein you get by adding the cheese makes them nutritious as well. I also love to make them on cozy Sunday mornings to have with my coffee and Sunday papers. Enjoy!
Ingredients:
1 ¼ cups flour
¾ cup corn meal
¼ cup plus 1 Tbsp Sugar
2 tsp baking powder
1 cup skim milk
1/3 cup vegetable oil
1 egg, beaten
¾ cup shredded cheddar cheese
Combine dry ingredients. Stir in milk, oil and egg. Mix only until dry ingredients are moistened. Stir in the cheese. (You can experiment with other cheeses - I also like to use shredded Asiago cheese in mine)
Fill greased (Use Pam spray to save fat and calories) muffin tin with batter. Bake at 400F degrees for 15-20 min. Cool for 10 minutes then remove muffins to finish cooling on a rack.

I usually would make muffins for breakfast. But, these sound great with dinner. This is just the excuse I need to spend Sunday making Chili.
