64Becky's Yummy Nacho Soup
My wife published this little recipe offline through Save Mart way back when. While this great cheese soup is great for a cold, maybe foggy night, it is also great as a side for hot Mexican Food on a summer day:
Ingredients:
1/2 pound ground beef
1/2 cup chopped onion
1 package (10 ounces) frozen mixed vegetables
Salt and pepper, to taste
1/2 teaspoon parsley
1 teaspoon chili powder
1/2 teaspoon oregano
1 can cheddar cheese soup
1/2 can EACH water and milk
1 cup cooked rice
1/4-1/2 cup salsa (depending on taste)
Directions for Becky's Yummy Nacho Soup
Brown ground beef; add onions and mixed vegetables. Saute until vegetables are nearly defrosted. Add remaining ingredients, blending well. Cook over medium-high heat until bubbly. Serve immediately with fresh tortilla strips and a green salad. Makes 4 servings.
I like to sprinkle a blend of Mexican cheese on top and add a little sour cream. You can substitute cilantro for parsley as well. And you can substitute a brown or even wild rice for white rice. Enjoy this simple and easy dish that will make the kids happy as well as adults.
