Well the main ingredient is potatoes.....You can either bake them or boil them with the skin on. I prefer russet potatoes with this recipe, but you can use any kind. The reason I boil mine is so they will be less dry. After I boil them I let them sit on a paper towel to drain excess water.
Quarter the potatoes and put in bowl(while still warm)
add I finely chopped onon(or a couple spring onions chop some of the green too)
bacon bits(optional)..I like them for the color
butter or margarine
sour cream
salt/pepper to taste
shredded cheddar cheese
chives(optional)
and parsley
mix together and you have a lovely potatoe salad that will go with anything,it can be served hot or cold.
