I love bananas, but never seem to be able to eat the whole bunch before they start to go bad! But I never throw a banana away...I put them in the freezer and then when my stash of bananas is big enough I make some delicious and easy banana bread! This recipe has 3 variations...

The first one is an old family recipe that uses buttermilk and oil. It is delicious, but probably not the healthiest as we are becoming more health conscious in today's society.

The second version was me experimenting with the original recipe to make it healthier - so I used yogurt and flaxseed to replace the buttermilk and oil - still delicious!

The third and final recipe is from the day I started making banana bread only to realize I didn't have any plain yogurt in the house....so why not use applesauce - yummy and super moist!


Version 1

  • 3 medium bananas
  • 1-1/2 c. sugar
  • 2 eggs
  • 1/2 c. vegetable oil
  • 1/4 c. + 1 T. buttermilk
  • 1 t. vanilla
  • 1-3/4 c. flour
  • 1 t. baking soda
  • 1 t. salt

Preheat the oven to 325 degrees. Lightly grease (and sugar - optional*) your loaf pan. Using an electric mixer, mix the first 6 ingredients. Stir in the remaining ingredients until well mixed. Pour batter into pan and bake for 1 hour.  Check doneness by inserting a toothpick in the center. 

Version 2 (with yogurt)

  • 3 medium bananas
  • 1-1/2 c. sugar
  • 2 eggs
  • 1 c. plain yogurt
  • 2 T. milled flaxseed
  • 1 t. vanilla
  • 1-3/4 c. flour
  • 1 t. baking soda
  • 1 t. salt

Preheat the oven to 325 degrees. Lightly grease (and sugar - optional*) your loaf pan. Using an electric mixer, mix the first 6 ingredients. Stir in the remaining ingredients until well mixed. Pour batter into pan and bake for 1 hour. Check doneness by inserting a toothpick in the center.

Version 3 (with applesauce)

 

  • 3 medium bananas

  • 1 c. applesauce
  • 2 T. milled flaxseed
  • 1 t. vanilla
  • 1-3/4 c. flour
  • 1 t. baking soda
  • 1 t. salt

Preheat the oven to 325 degrees. Lightly grease (and sugar - optional*) your loaf pan. Using an electric mixer, mix the first 6 ingredients. Stir in the remaining ingredients until well mixed. Pour batter into pan and bake for 1 hour.  Check doneness by inserting a toothpick in the center.   

*Adding sugar to the pan after greasing makes the crust harder/crispy.

**Bake times may be more than 1 hour depending on humidity level, etc (especially with the applesauce version)...if the top of the bread starts to brown before the inside is done place a piece of foil over the bread and continue baking.
