If I understand you correctly MM Del Rosario you are looking for a tasty recipe for coconut with chicken or pork. Frankly either meat is good but I think pork has that slight edge - a very tasty meat as long as you're allowed to eat pork.
Now let me ask you have you ever heard of "Coconut rundown sauce" ? This is actually a coconut sauce made in the Caribbean, very spicy and delicious, it is quite a process making it but these days you can actually buy it in west-indian supermarkets or chinese supermarkets so if you can, you need to get down to your local high street, depends where you're living of course.
Now depends on how many people you're cooking for; but lets say:-
1 1b belly pork ( belly pork is very tasty to cook with)
Garlic cloves ( the amount of garlic you use is up to you)
3-4 beef tomatoes
3 spring onions
1 tsp ground spice ( you will also find this in most supermarkets)
1 tsp brown sugar
1 jar of Coconut Rundown Sauce
1 tbs coconut juice ( you can buy coconut juice in tins or bottles)
Salt ( the amount you use is up to you)
1 large onion - if you like it fairly hot you can add some "scotch bonnet pepper sauce or even the fresh paper - bought from most markets - But Be Warned ! It is very Hot!!!.
And just a small piece of ginger, crushed. 1 tbs vegetable oil
Cut belly pork into roughly 1" pieces
Place cooking pot on stove, turn up heat so it gets v.hot
Lower heat- add vegetable oil. onion,garlic, sugar, allspice, tomatoes, ginger, and spring onions, saute for about 2 mins. keeping a watchful eye and stiring all the while.
Add the pork turn up heat to "Prime" the meat, but stiring as you go, add coconut milk, after 1 min. add the rundown sauce, reduce heat let it simmer until the pork is tender - about 35 minutes on a low heat.
The thing with food is you know basically when it is cooked; you start to get that smell of flavours wafting through the air!
Serve this on a bed of steamed rice - and a nice salad - Wicked!
