Betty Crocker Gluten Free Mixes and Recipe Ideas

You might be disappointed that Betty Crocker has created only 4 gluten-free mixes. But with these 4 Betty Crocker gluten-free mixes you can create many different variations. Here are a few ideas - gluten free marble cake, gluten free blueberry cornmeal muffins, and gluten free rocky road bars.

Gluten-Free Marble Cake

Basically to create an impressive gluten-free marble cake you'll need one each of the Betty Crocker Gluten-Free Yellow Cake Mix and the Betty Crocker Gluten-Free Devil's Food Cake Mix. Prepare both of the cake mixes according to package directions and then spoon the yellow and devil's food batter alternately into prepared pans. Take a knife and cut through the batter in a zigzag pattern. Bake until done. Frost with your favorite gluten-free chocolate frosting.

Gluten-Free Carrot Cake

Start with a Betty Crocker Gluten-Free Yellow Cake Mix and follow the preparation instructions. Except that you'll also add 1/2 teaspon ground cinnamon, 1/4 teaspoon ground nutmeg, 2 teaspoons vanilla, 1 cup finely shredded carrots, and 1/4 cup of pecans or walnuts. Top with your favorite cream cheese frosting.

If you've been growing a lot of carrots in your garden, this is a wonderful to use them up. It's also a great idea for coffee break.

Gluten-Free Blueberry Cornmeal Muffins

I love to serve Blueberry Cornmeal Muffins at brunch. And it now makes me very happy that I'll be able to serve my friends that require a gluten-free diet. These gluten-free blueberry cornmeal muffins are so easy if you start with a Betty Mills Gluten Free Yellow Cake Mix.

So after you get out your gluten-free yellow cake mix, you're going to add the following stuff - 1/2 cup cornmeal, 3/4 cups water, 1/2 cup butter melted, 2 teaspons vanilla, 3 beaten eggs, 2 teaspons grated orange rind, 1.5 cups fresh or frozen blueberries (if frozen don't thaw), 1 tablespoon sugar.

Spoon the batter into a muffin tin and bake until done about 15 to 20 minutes. You'll get about 18 muffins.

Gluten-Free Rocky Road Bars

If you've got a craving for something ooey-gooey and chocolately, then start with a Betty Crocker Gluten-Free Chocolate Chip Cookie Mix and whip up a bar of Gluten-Free Rocky Road Bars. First you prepare a 13 x 9 pan with non-stick spray. Then make the chocolate chip cookie dough following the instructions on the box. Basically this means you add 1 egg, 1 teaspoon vanilla. Spread in the ban and bake 20 to 25 minutes at 350.

As soon as the pan comes out of the oven, top with 2 cups semisweet chocolate chips and let melt.  Add 3 cups miniature marshmallows. Top with pecans.

The broil for 3 to 5 minutes to make it gooey and chewy!

A very interesting article. I know several people who are gluten intolerant/coeliacs and so finding gluten free food is a major challenge. Fortunately in the UK things have changed for the better over the last few years, so that all major shops, cafes etc now offer gluten free alternatives to popular meals. However, I can see why there would be a need for such items!
