Crawfish Fettuccine

This is a fairly quick, easy and very rich recipe. It can be easily adapted by using low fat products. You can also substitute shrimp or crabmeat for the crawfish tails.

You may also want to decrease the pepper in it. It is pretty hot.

Ingredients:

1 stick of butter

1 large onion chopped

1 green bell pepper chopped

2 stalks of celery 1 cup half and half

1 clove garlic, minced

2 teaspoons cajun seasoning

1 tablespoon all-purpose flour

1/2 tsp each of cayenne, black and white pepper,

1 pound peeled crawfish tails

8 ounces of processed cheese

1 pound dry fettuccine

1/2 cup grated Parmesan cheese

Directions

  1. Melt butter in a large skillet on medium heat. Saute onion, bell pepper, celery, and garlic until tender.
  2. Stir in flour and simmer for 5 minutes, stirring often.
  3. Stir in crawfish tails. Simmer covered for about 10 minutes.
  4. Stir in processed cheese, half and half, and seasonings. Cover and simmer for about 20 minutes.
  5. Cook pasta according to package directions.
  6. Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 baking dish. Stir noodles into crawfish mixture and pour into prepared dish.
  7. Bake in preheated oven for 20 minutes or until bubbly.

Tasty Garlic Bread

Ingredients

A loaf of your favorite French ot Italian bread

1 stick of butter (softened)

Garlic powder to taste

1 tablespoon parsley flakes

1 pinch black pepper

Parmesan cheese

Directions

Split the loaf lengthwise, spread the softened butter thickly over the bread, dust with garlic powder, lightly sprinkle black pepper over the butter, then parsley flakes, top with Parmesan. Broil for about 2 to 3 minutes. Watch carefully.

Serve with a nice salad or your favorite vegetables.

This meal is always a treat for the family and there is never a morsel left.
