Ingredients
2 lb Ground chuck1 Large onion finely chopped1 cup Breaded crumbs2/3 cup Chill sauce or kechup2/3 Parsely finely chopped1tbsp Worcestershire sauce3 Eggs lightly beaten2 tbs Salt1/2 Black pepperPreparation
prehet oven to 350. combine all ingredents in large bowl and mix with your hands intil well blended but not over mix.
fill lightly greased 9x5 inch loaf panwith mix. put pan on baking sheet and bake intil meat is firm and has shunk from the sides of the pan, about 1 1/4 hours. pour off excess fat let set 15 minn.
Cook's Notes
serve this american classic of bake or mashed potatoes , a green vegetable such as greenbean or broccoli and sliced tomatos .meatloaf sandwitches the next day are almost good.

1 slightly beaten egg
3/4 cup soft bread crumbs (1 slice bread)
3/4 cup salsa
1/3 cup raisins
1/4 cup finely chopped almonds, toasted
1/4 cup finely chopped onion
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1-1/2 pounds lean ground beef
1/4 cup salsa
Salsa (optional)
Directions
1. In a large bowl stir together the egg, bread crumbs, the 3/4 cup salsa, the raisins, almonds, onion, sugar, salt, cinnamon, and cloves. Add ground beef; mix well. In a shallow baking pan pat meat mixture into an 8x4x2-inch oval loaf. (Or, pat meat mixture into an 8x4x2-inch loaf pan.) Bake in a 350 degree F oven for 1 hour.
2. Drain off fat. Insert a meat thermometer into center of loaf. Spoon the 1/4 cup salsa over meat loaf. Bake for 5 to 10 minutes more or until thermometer registers 160 degree F. Transfer meat loaf to a serving platter. Let stand 10 minutes before serving.
3. To serve, slice meat loaf with a thin-bladed serrated knife. If desired, serve meat loaf with additional salsa. Makes 6 servings.

1 egg, beaten
1 cup soft bread crumbs
1/2 cup bottled pasta sauce with vegetables and/or herbs
1 to 2 cloves garlic, minced
1/2 teaspoon dried rosemary, crushed
8 ounces Italian sausage, pork sausage links, or ground beef
1 pound ground beef
2 ounces provolone or mozzarella cheese, cubed
2 tablespoons bottled pasta sauce with vegetables and/or herbs
2 tablespoons shredded provolone or mozzarella cheese
Directions
1. In a large bowl combine egg, bread crumbs, the 1/2 cup pasta sauce, garlic, and rosemary. Remove casings from sausage, if using. Add ground beef and sausage; mix well. Press two-thirds of the mixture evenly in the bottom of an 8x4x2-inch loaf pan.
2. Make a 1/2-inch indentation down the center of the meat mixture. Place the cheese cubes in indentation. Pat remaining meat mixture evenly over top.
3. Bake, uncovered, in a 350 degree F oven for 55 to 60 minutes until no pink remains and until a thermometer inserted in the thickest part of the loaf registers 170 degree F. Let stand for 10 minutes.
4. To serve, transfer meat loaf to a platter. Drizzle top with the 2 tablespoons pasta sauce Sprinkle with the 2 tablespoons shredded cheese. If desired, garnish with fresh rosemary sprigs. Makes 6 servings.
To Make Ahead: Prepare meat loaf as directed, except do not bake. Cover and chill for up to 24 hours. To serve, bake meat loaf, uncovered, about 1 hour or until no pink remains and a thermometer inserted into the thickest part of the meat loaf registers 170 degree F.

1/4 cup beer or water

Directions
1. In a mixing bowl stir together the egg white; bread crumbs, oats, or wheat germ; onion; vegetable juice cocktail, tomato juice, or milk; mustard; salt; and pepper. Add beef or pork; mix well. On waxed paper shape mixture into a 4- to 5-inch round loaf.
2. To grill, in a covered grill arrange medium-hot coals around a drip pan. Test for medium heat above the pan. Carefully invert loaf onto the grill rack over the drip pan, but not over the coals. Peel off waxed paper. Lower the grill hood. Grill for 30 to 35 minutes or until no pink remains.
3. Or, to bake, place loaf in a shallow baking pan. Bake in a 350 degree F oven for 30 to 35 minutes or until no pink remains.
4. Meanwhile, for sauce, in a small saucepan cook and stir bacon until crisp. Remove bacon from pan with a slotted spoon; drain on paper towels. Add onion to bacon drippings in saucepan. Cook over medium heat for 2 to 3 minutes or till onion is tender but not brown. Stir in bacon pieces, tomato sauce, beer or water, brown sugar, lemon juice, Worcestershire sauce, celery seed, salt, and pepper. Simmer sauce, uncovered, about 10 minutes or to desired consistency. To serve, spoon some of the sauce over the loaf. Pass the remaining sauce. Makes 2 servings.
